If you’re looking for a tasty snack, something for the lunchbox or a quick treat to whip out for unexpected guests, this is the one bowl slice for you. This simple but oh-so-tasty Oat Slice comes together in minutes – no electric mixer needed.

You don’t need any fancy ingredients and it’s highly customisable depending on what you have on hand. It’s buttery and sweet (but not too sweet) and a little bit hearty too, thanks to plenty of rolled oats. It’s my new go-to snack.

Over the Christmas break, I was happily reunited with family after a long year of lockdowns and border closures. It was a very sweet holiday season for us ❤️ One afternoon, we went over to my sister-in-law’s house for afternoon tea.

When we arrived, she whipped out a buttery Oat Slice for us to enjoy. A few bites in, I was smitten! I immediately asked her how she made it and what was in it, and when I got home, I set about recreating a copycat version of my own.

Taking a little inspo from my favourite Anzac Biscuits and Oatmeal Cookies, this baked oat slice is buttery, chewy and incredibly easy to make. It’s filled with oats and coconut, with plenty of butter and brown sugar for that rich, caramel-like flavour.

It’s quick, easy and very moreish.

what you will need

  • Plain flour: Or all purpose flour.
  • Rolled oats: Don’t use quick oats, you want whole oats for texture and consistency.
  • Coconut: I prefer shredded coconut but desiccated works too.
  • Brown sugar: Adds delicious caramel notes.
  • Baking powder: For a little lift.
  • Butter: We use melted butter to combine everything together.
  • Egg: Just one egg to bind.
  • Vanilla extract: For extra flavour.
  • Mix-in’s of your choice: More on that below.

  1. Stir together flour, oats, coconut, brown sugar, baking powder and salt.
  2. Whisk together butter, egg and vanilla – just to break up the yolk.
  3. Add wet ingredients to dry ingredients and stir until combined.
  4. Stir through mix-in’s.
  5. Bake until golden.

Quick tips for the perfect oat slice

  • Weigh your ingredients using abaking scale: For the best results, use a scale to measure your dry ingredients like flour, oats, and sugar. Using cup measurements can result in adding too much flour or oats, which may result in your slice being dry and crumbly.
  • Don’t overbake your slice: Keep an eye on your slice as it will go from baked to burnt fairly quickly. Once it’s evenly browned and golden on the edges, it’s ready to come out of the oven.
  • Take it out of the pan: Your Oat Slice will continue to bake as it cools if it’s left in the hot pan, which can result in hardened edges. However, it’ll be too fragile to lift out of the pan straight away. Let it cool for 15 minutes or so, then carefully lift your slice out of the hot pan and place it onto a wire rack to cool completely.

make it your own

You can add any mix-in’s you like to this delicious Oat Slice. I love to add chocolate chips, sultanas or nuts, but you can use whatever you have in the pantry. Here are a few ideas of mix-in’s you can use. I used chocolate chips and pecans in the one pictured here.

  • Chocolate chips (milk, dark, white chocolate or Caramilk works well too!)
  • Sultanas or raisins (for a little chew)
  • Cranberries, blueberries or apricots (tart and fruity)
  • Walnuts, almonds or pecans (add some crunch)
  • Orange zest (fresh and zingy)

Ingredients

  • 140 grams (1 cup) plain flour or all purpose flour
  • 100 grams (1 cup) whole rolled oats
  • 60 grams (1/2 cup) shredded coconut
  • 135 grams (3/4 cup) brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 115 grams (1/2 cup or 1 stick) unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mix-in’s of your choice (see notes)

Instructions

  1. Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch square pan with baking or parchment paper, ensuring two sides overhang (this will make it easier to remove the slice later).
  2. In a large mixing bowl, add flour, oats, coconut, brown sugar, baking powder and salt. Give it a quick stir.
  3. In a small bowl, add melted butter, egg and vanilla. Beat briefly with a fork, just to break up the egg yolk.
  4. Add butter mixture to dry ingredients and stir using a spatula until combined. Stir through your mix-in’s.
  5. Transfer mixture to your prepared pan. Use the back of a spoon to press down firmly to form one even layer.
  6. Bake for approximately 25 minutes or until golden. Leave to cool for 15 minutes, then carefully remove from baking pan and set on a wire rack to cool completely.
  7. Cut into small squares to serve. Store leftovers in an airtight container at room temperature.

Notes

Coconut: You can use shredded coconut or desiccated coconut for this recipe. Be sure to use unsweetened coconut. If you want to omit the coconut, add an extra 35 grams (1/4 cup) plain flour or all purpose flour.

Mix-in’s: This recipe is highly customisable. I recommend adding 1 cup (total) mix-in’s, but you can choose to add two different mix-in’s (1/2 cup each). The slice pictured has 1/2 cup of chocolate chips and 1/2 chopped pecans. Great options include: chocolate chips, sultanas or raisins, dried cranberries or apricots, almonds, walnuts or macadamias, or even M&M’s. Storage: Keep slice in an airtight container at room temperature. Or you can freeze the slice.

    In the oven as we speak and my mix-in’s were milk chocolate chips and chopped hazelnuts and I will drizzle the top once cooled with dark and white melted chocolate!!!

    Quick and easy to make (thanks to your specific instructions) and tasty. My mix-ins were 1/2 cup dark chocolate chips with a combined 1/2 cup of chopped almonds, white chocolate buttons and finely diced dried apricots. Delish!

    This was lovely. My combination was finely crushed walnuts and Caramilk choc chips. I did melt a few of the Caramilk chips in with the butter so the flavour was spread throughout the slice.
